I don’t know about you, but I’m constantly on a lookout for any type of bread substitute. I do enjoy a sourdough English Muffin from time to time, but discovering something else to “hold” my breakfast ingredients (do people eat bread at any other times but breakfast?) is a field day for me.

I love green tomatoes and green peppers. You can use both for this recipe, based on your preference. Here, we have fried green peppers, coated and lightly fried; crunchy on the outside and soft on the inside (isn’t that everyone’s favorite bite?). The fried green peppers serve as a base, topped with mashed avocado (I season mine with sea salt, black pepper & extra virgin olive oil), and poached egg.

      

 What you’ll need:

  • large green tomato
  • sea salt
  • ground black pepper
  • flour
  • eggs (depending on serving size)
  • breadcrumbs
  • extra virgin olive oil
  • avocado
  • lemon juice

 To make it:

  • slice tomato into quater inch thick slices. Season tomato slices on both sides with salt and pepper.
  • prepare 3 dishes with flour, whisked egg and breadcrumbs. Dip the green tomato slices in each one, with that order.
  • put some olive oil in the pan, and cook each side of the tomato until golden brown. drain the excess oil onto the paper towel.
  • mash the avocado with the fork, add sea salt, black pepper and extra virgin olive oil.
  • place it on the fried green tomato
  • poach an egg (step by step recipe), and place it on top of the avocado mash.

Enjoy! And remember to use green tomatoes that are basically hard unripe red tomatoes and not a heirloom tomatoes with a green flesh.
